Apple Spice Cake
Ingredients for Cake Layers
2 cups apple pear sauce (see below for recipe)
1 cup soaked and dried pecans, ground
6 dates, soaked or 1/3 cup date paste
1 scoop Garden of Life’s Super Seed
1 Tablespoon cinnamon
1 Tablespoon vanilla
½ teaspoon Celtic sea salt
Ingredients for Icing:
2 cups pine nuts, soaked
2 pears, peeled and chopped
¼ cup raw honey
2 Tablespoons Garden of Life Extra Virgin Coconut Oil
1 Tablespoon vanilla
Ingredients for Topping:
1 cup mix of chopped pecans and walnuts
¼ cup raw honey
1½ teaspoons cinnamon
½ teaspoon Celtic sea salt
Garnish:
1 full slice of pear
sprinkles of cinnamon per serving
Directions:
In a food processor, blend Cake Layer ingredients until smooth. Spread 2 cups cake batter on a solid sheet and dehydrate @ 105° for four hours. Flip and continue until dry. Blend icing ingredients in a mixer until smooth, and reserve some for garnishing slices. Place in the freezer to firm while layers are drying. Assemble cake alternating between cake layers and icing until 3 to 4 inches in height. Freeze and slice for a quick healthy dessert to serve. Combine topping ingredients, and place in the freezer to firm. When ready to serve, remove cake and slice while frozen to reveal the beautiful layers. Before serving, sprinkle Apple Spice Cake with topping, and garnish with a slice of pear and sprinkled cinnamon. Drizzle with reserved icing.

Apple-Pear Sauce
Ingredients:
2 cups apples, peeled and chopped
2 cups pears, peeled and chopped
1 banana, peeled and sliced
1 teaspoon lemon juice
cinnamon, sprinkled to taste
Garden of Life’s Super Seed, sprinkled
Directions:
Process ingredients in a food processor until desired texture is achieved. Refrigerate until ready to use. Sprinkle with cinnamon before using.
