Spicy Hot Apple Cider

Spicy Hot Apple Cider

Ingredients:
1 gallon organic apple cider
3 cups organic orange juice
½ cup lemon juice
4 cinnamon sticks
12 cloves
½ teaspoon nutmeg

Directions:
Mix all ingredients together in a large saucepan or pot. Boil for about one minute. Serve.

Apple-Raisin Streusel Kuchen

Apple-Raisin Streusel Kuchen

Ingredients:
5 cups of chopped and peeled organic Golden Delicious or Rome apples (about 4 large)
coconut oil or organic butter to coat jelly-roll pan
2 Tablespoons raw honey
1½ cups whole wheat flour
1/3 cup raw honey
1¼ teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon sea salt
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
3/4 cup organic buttermilk
2 organic, high omega-3 eggs
2½ Tablespoons coconut oil or butter
1½ teaspoons grated lemon rind
½ cup raisins
½ cup packed organic brown sugar
3 Tablespoons whole wheat flour
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
2½ Tablespoons chilled butter
2 teaspoons raw honey

Directions:
Preheat oven to 475° and arrange apples in a single layer in a pan coated with coconut oil or butter. Stir together the apples and 1 Tablespoon raw honey, coating apples well, and bake at 475° for 8 minutes. Remove from oven and stir together with additional 1 Tablespoon raw honey. Bake an additional 7 minutes or until apples are slightly soft. Remove from oven and cool. Set aside.

Reduce the oven temperature to 375°.  Place 1½ cups whole wheat flour into a large mixing bowl and combine with next 6 ingredients (flour through 1/8 teaspoon nutmeg in the list of ingredients). Combine buttermilk, eggs, oil and grated lemon rind, stirring well with a whisk. Add to flour mixture, stirring just until moist. Gently fold in cooled apples and raisins. Spoon mixture into a 10-inch springform pan coated with coconut oil or butter; place pan on a baking sheet.

Combine brown sugar, 3 Tablespoons flour, ½ teaspoon cinnamon, and ¼ teaspoon nutmeg; cut in butter and remaining 2 teaspoons of raw honey with a pastry blender or 2 knives until the mixture resembles coarse meal. Sprinkle evenly over batter in pan. Bake at 375° for 50 minutes or until a wooden pick inserted in center comes out clean. Cool on a wire rack. Serve.

Apple Spice Cake


Apple Spice Cake

Ingredients for Cake Layers
2 cups apple pear sauce (see below for recipe)
1 cup soaked and dried pecans, ground
6 dates, soaked or 1/3 cup date paste
1 scoop Garden of Life’s Super Seed
1 Tablespoon cinnamon
1 Tablespoon vanilla
½ teaspoon Celtic sea salt

Ingredients for Icing:
2 cups pine nuts, soaked
2 pears, peeled and chopped
¼ cup raw honey
2 Tablespoons Garden of Life Extra Virgin Coconut Oil
1 Tablespoon vanilla

Ingredients for Topping:
1 cup mix of chopped pecans and walnuts
¼ cup raw honey
1½ teaspoons cinnamon
½ teaspoon Celtic sea salt

Garnish:
1 full slice of pear
sprinkles of cinnamon per serving

Directions:
In a food processor, blend Cake Layer ingredients until smooth. Spread 2 cups cake batter on a solid sheet and dehydrate @ 105° for four hours. Flip and continue until dry. Blend icing ingredients in a mixer until smooth, and reserve some for garnishing slices. Place in the freezer to firm while layers are drying. Assemble cake alternating between cake layers and icing until 3 to 4 inches in height. Freeze and slice for a quick healthy dessert to serve. Combine topping ingredients, and place in the freezer to firm. When ready to serve, remove cake and slice while frozen to reveal the beautiful layers. Before serving, sprinkle Apple Spice Cake with topping, and garnish with a slice of pear and sprinkled cinnamon. Drizzle with reserved icing.

Serves 8

Apple-Pear Sauce

Ingredients:
2 cups apples, peeled and chopped
2 cups pears, peeled and chopped
1 banana, peeled and sliced
1 teaspoon lemon juice
cinnamon, sprinkled to taste
Garden of Life’s Super Seed, sprinkled

Directions:
Process ingredients in a food processor until desired texture is achieved. Refrigerate until ready to use. Sprinkle with cinnamon before using.
