Flaxseed & Walnut Hummus
Serves 4 to 6
Ingredients:
2 cups of cooked chickpeas, drained
1/3 cup of walnuts
1 clove of garlic, peeled
2 Tablespoons of flaxseeds, ground
1/3 cup of pure water
4 Tablespoons of lemon juice
¼ teaspoon of ground cumin
½ teaspoon of paprika
dash of chili powder
Directions:
Using a food processor, blend together the chickpeas, walnuts, garlic, flaxseeds, water and lemon juice. Blend until the mixture is smooth, adding more water, if necessary. Add the cumin, paprika and chili powder and blend for about another 30 to 60 seconds. Serve with flaxseed crackers, veggies or as a filling for a wrap.
No Bake Flaxseed Cookies
Makes about a dozen cookies
Ingredients:
4 cups flaxseeds
¼ cup of extra virgin coconut oil
1 cup of raw honey
Directions:
In a food processor, grind the flaxseeds. Add the coconut oil and raw honey. Blend until the mixture forms a dough. Take the dough and form one dozen cookies. Top with nuts or raisins—or whatever you wish!
