Tailored-to-You Green Salad
Serves as many as you wish, depending on amounts of ingredients you select
Ingredients: (Choose all that you want to add.)
Salad greens—organic spring mix, spinach, arugula, kale or other greens
Alfalfa sprouts
Organic tomatoes, diced
Organic avocados, sliced
Artichoke hearts
Organic green bell peppers, sliced
Organic cucumbers, diced
Organic celery, diced
Organic onions, sliced
Organic black beans
Raw walnuts, pecans or pine nuts
Organic cheese of your choice, shredded
Directions:
In a large salad bowl, layer the selected ingredients in amounts you prefer. Top with your favorite healthy salad dressing. Serve.
Quinoa-Mango Salad
Serves 4
Salad Ingredients:
1 cup quinoa
2 cups of pure water
¼ teaspoon sea salt
1 organic mango, peeled and chopped
1 organic cucumber, diced
1/3 cup raw almonds, sliced
3 Tablespoons raw pumpkin seeds
¼ cup organic balsamic vinaigrette salad dressing or dressing of your choice that complements the salad
Directions:
Rinse the quinoa and boil for ten minutes in the two cups of water. Cover and let quinoa sit until all the water is absorbed. Fluff the quinoa with a fork and allow it to cool to room temperature. Meanwhile, peel the mango and cut it into cubes. Dice the cucumber. In a medium bowl, add the mango with the cucumber and then add the almonds and pumpkin seeds. Then add the cooled quinoa mixture to the mango mixture. Pour the dressing over the mixture and toss. Serve.
