Avocado, Raw Cheese and Beet Sandwiches
Serves 2 to 4
Ingredients:
Four slices of whole grain sprouted bread or healthy bread of your choice
1 avocado, cut into thin slices
2 ounces of raw cheese of your choice
¼ cup sliced beets
1 cup baby spinach
¼ slivered organic almonds
vinaigrette of your choice
Directions:
On two slices of sprouted bread, layer half the avocado, raw cheese, beets, spinach and almonds. Drizzle with vinaigrette of your choice. Top with the other two slices of sprouted bread. Slice diagonally and serve.
Avocado-Coconut Creamsicles
Makes about 8 creamsicles
Ingredients:
2 large avocados
½ cup of coconut milk
½ cup of organic cream
4 Tablespoons raw honey
Directions:
In a blender, blend all the ingredients until smooth and creamy. Fill popsicle molds with the mixture, then freeze for at least five hours. Serve.
