Chocolate Vegan Raw Protein Crisps

With the holidays approaching, I have been experimenting with ways to make healthy or at least semi-healthy cookies and snacks. Making vegan cookies can be a challenge sometimes with no butter or eggs in the recipe, but I finally got these right on the third try and they were tested by about 15 people in our office at Garden of Life. Made with Raw Protein and Extra Virgin Coconut Oil, these cookie “crisps” are crunchy around the edges and gooey and soft in the middle. Try them yourself and see how fast they disappear!



½ cup brown sugar

¼ cup white sugar

2/3 cup Garden of Life coconut oil, melted

¼ cup chocolate almond milk

¾ cup chocolate chips

1 ½ cups flour

1 packet or one scoop of Garden of Life Raw Protein Vanilla or Chocolate

2 tsp. vanilla extract

½ tsp. baking soda

¼ tsp. salt


Preheat oven to 350 degrees and grease a baking sheet with coconut oil. Combine sugars, coconut oil, almond milk, and Raw Protein in a mixing bowl. Mix at low speed until combined, about 2-3 minutes. Add the vanilla extract and mix well.

Gradually add one cup of flour, the baking soda, and salt. Add the remaining flour  and fold in chocolate chips. The dough will be sticky, so grease your hands before working with the dough.

Roll the dough into small balls and flatten with a fork or your hands. Place on a baking sheet at least two inches apart, as they will spread a lot! Bake 8-9 minutes and cool on the baking sheet for two minutes before transferring to a wire rack. Enjoy with a cup of almond milk, organic tea, coffee or your favorite beverage!
