Raspberry Spinach Salad with Flax Seeds

Eating clean and green is easy with this salad packed with delicious nutrients, healthy fats, antioxidants and omega-3s. Best of all, the blend of flavors and fiber from flax seeds makes it satisfying enough for a main dish. You can also experiment a bit by substituting pomegranate seeds if fresh raspberries are in short supply or by using watercress in place of baby spinach. Add your favorite dressing and it may become one of your favorite go-to salads!


Ingredients

2 cups organic baby spinach or watercress
1 cup organic raspberries or pomegranate seeds
1 cup toasted almonds
1 avocado, diced
1 tablespoon Garden of Life Extra Virgin Coconut Oil
1 tablespoon flax seeds or toasted sesame with flax

Wash the spinach and raspberries and pat dry with paper towels. Place almonds in a small pan with coconut oil and toast for 10 minutes in a 400 degree oven.

While almonds are toasting, dice the avocado. Remove almonds from oven and cool completely. Add spinach, raspberries, almonds and avocado to a bowl and lightly toss. Top with flax seeds or toasted sesame with flax (I used the Celtic Sea Salt brand) and enjoy!

I tried this salad and added blueberries for some extra punch. It was great!
