Cucumber Flaxseed Salad

Flaxseeds are considered a "super food," which is why Garden of Lifer's love it and like to add it to   everything. Researchers rank flaxseeds as the number one source of omega-3s and also as the number one source of lignans, which are fiber-like compounds that provide antioxidant protection. There are many other health benefits associated with flaxseeds, so whether you choose to eat them  whole or ground, they will add a huge nutritional boost to your diet. This Cucumber Flaxseed Salad is quick and easy to make, along with a tangy Peanut Lime Dressing that will tickle your taste buds. Try it as a side dish or as a main dish if you're a vegetarian.



Ingredients:    
1 lime  
1 Tablespoon organic creamy peanut butter  
2 Tablespoons Garden of Life Extra Virgin Coconut Oil  
1 Tablespoon sesame seed oil
2 cucumbers, thinly sliced  
1 carrot, shredded  
1/4 cup dry roasted peanuts  
1 Tablespoon flaxseeds    



Prepare the Peanut-Lime Dressing first by squeezing the juice of one lime into a small bowl. Add   coconut oil, sesame seed oil and peanut butter, beating with a wire whisk until smooth. Next, slice cucumbers into thin rounds and arrange on a plate. Shred the carrot. Drizzle dressing on top of cucumbers. Mound shredded carrots in the middle of  the cucumbers, then sprinkle  peanuts and flaxseeds on top.
