Give Your Valentines A Little Love On Their Plate

With all of the temptations to go out and buy various sweets for your Valentine(s) this year, why not give them a little love with these tasty muffins? Not only will you give them a tasty home made treat, but these also pack a healthy punch.

By adding flax to your diet, you're adding one of the best plant sources of healthy omega-3 fatty acids. 50g of flaxseed has about the same amount of omega-3s as three pounds of salmon. Flax also contains soluble and insoluble fiber that helps keep your digestive system in healthy working order. Flax is also a complete protein-meaning that it contains every amino acid that your body does not make on its own, which makes it a great addition to vegetarian and vegan diets.

Oats help lower the bad (or LDL) cholesterol associated with heart disease. The soluble fiber in oats is also known to help lower blood sugar. Like flax, oats are a great form of plant protein and heart-healthy fats. Oats contain more than 20 unique polyphenols called avenanthramides, which have strong anti-oxidant, anti-inflammatory and anti-itching activity.  

Unbelievable that those little plants are chock full of health!

This is a great recipe for busy moms and dads. From start to finish, you can have these amazing muffins on your plate in about 30-45 minutes...well, maybe an hour if you can give them a few minutes to cool down!


Banana Oat Flax Morning Protein Muffins

1 1/2 cups all-purpose flour
1 scoop/packet of Garden of Life RAW Protein Vanilla
1/3 cup ground flax
1 cup rolled oats
1/2 cup turbinado or rapadura sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg or egg replacer (for vegan version)
3/4 cup milk or vanilla almond milk (for vegan version)
1/3 cup Garden of Life Extra Virgin Coconut Oil
1/2 teaspoon vanilla extract
1 cup mashed bananas
2 or 3 organic strawberries, tops trimmed and sliced down to form a heart

 

Combine flour, oats, sugar, baking powder, soda, flax, RAW Protein and salt.

In a large bowl, beat the egg lightly. Stir in the milk, coconut oil, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them. Top each with a fresh strawberry heart, making sure they are pushed into the batter just a bit.

Bake at 400 degrees F (205 degrees C) for 18 to 20 minutes. Cool and enjoy!
