Raw Protein Truffles

For those of you who know me or who read the blog, you know my love for Garden of Life products! This love all started back when Julie and I went to the Martha Stewart vegan episode taping. In our goodie bags we had an amazing bottle of Garden of Life Perfect Food Raw Green Super Food! These capsules are filled with raw veggie juice made from 35 nutrient-dense greens, sprouts, and veggies. Supplementing with these capsules, which are rich in chlorophyll, trace minerals, antioxidants, enzymes, and probiotics, gives you energy, healthy blood sugar levels, immune system support, and also help your body with detoxification, digestion, and elimination. WHOA! Easy to see why I fell in love right?

After the Raw Green Super Food I began using Garden of Life’s vitamin and mineral supplements (Vitamin Code) as well. Right now I use a women’s multivitamin, B-complex, and Iron. I definitely notice a difference between days when I supplement and days when I don’t.

My love brought me deeper into the Garden of Life products and I discovered the raw protein powders! I remember the first time I tried them. I bought a single serving packet of the unflavored protein for my morning smoothie. It was love at first taste! Within days I bought my first container of the protein powder.

So what sets this vegan protein apart from others?

- The source of protein comes from an organic and raw blend of sprouts including sprouted brown rice, amaranth, quinoa, millet, buckwheat, garbanzo bean, lentil, adzuki bean, flax seed, sunflower seed, pumpkin seed, chia seed, and sesame seed (17 grams of protein per serving)
- The powder contains live probiotics and enzymes
- There are no fillers, artificial flavors, or synthetic nutrients
- On top of this, the protein powder is USDA organic, raw, vegan, gluten free, dairy and lactose free, contains no isolates, artificial sweeteners, or preservatives

I use it in my morning smoothies, granola bars, and now in these phenomenal truffles.

For the truffles I used vanilla flavored raw protein powder that I was lucky enough to receive from Rhonda Price, Director of Media and Public Relations for Garden of Life. Here’s the delicious recipe:

Raw Protein Truffles

Yields 22 to 44 depending on size

1/3 cup raw coconut butter
4 Tbsp. (about 1 heaping scoop) Garden of Life raw protein, vanilla flavored
2 Tbsp. chia seeds
Pinch of pink Himalayan sea salt
3 tsp. raw maca powder
1/3 cup raw sunflower seeds
1/3 cup raw pepitas
1/3 cup raw walnuts
2/3 cup raisins
2/3 cup dried cranberries
1 cup raw nut butter
About 1 cup coconut flakes to roll the truffles in

In a food processor, combine the coconut butter, protein powder, chia seeds, salt, maca, nuts, seeds, and raisins. Process this into a nearly fine meal. I have a small food processor so I did this in a couple batches. Once processed, transfer to a mixing bowl.

With a spoon, combine the protein/nut mixture with the raw nut butter and cranberries. Stir well to incorporate.

Mold the truffles into balls (about 2 Tbsp. per truffle) using your hands then roll in coconut flakes. Set aside onto a plate or tray. Once all the truffles are rolled and covered in coconut, place in the refrigerator to set.

These truffles are great at room temperature or chilled (they’re a little harder when they’re cold). Enjoy guilt free at any time of the day.

For some reason, I have never put raw protein powder into any of my raw truffles or 'ball'-type snacks. What a great idea!
