Cucumber Chia Salad

I always like to have several cucumbers on hand during the summer months to add to salads or to perk up a glass of water. Cukes are also handy if you need a healthy side dish in a hurry, so that’s the best thing about this Cucumber Chia Salad you can prepare in less than 10 minutes. With just a few ingredients and a power-packed sprinkling of our Raw Organics Chia Seed on top, this cool and refreshing salad can be enjoyed for 2-3 days.




2 cucumbers

1 Vidalia onion

5 Tablespoons rice vinegar

1 teaspoon Garden of Life Extra Virgin Coconut Oil

1 Tablespoon Garden of Life Raw Organics Chia Seed

A dab of sweetener of your choice to taste: stevia, honey, Sugar in the Raw, etc.


Wash and thinly slice cucumbers. Slice onions and toss with cucumbers in a bowl. Melt coconut oil and add to vegetables, stirring well. Add vinegar and sweetener and combine well.


Chill salad in the refrigerator until ready to serve. Arrange cucumber slices and onion on a platter and sprinkle with chia seeds.
