Raw Organics Banana Chia Seed Bread

Posted by: Garden of Life on Friday, August 02, 2013

For an even healthier twist on traditional banana bread recipes, we tried making one with whole wheat flour, Garden of Life Extra Virgin Coconut Oil and our new Raw Organics Super Omega 3 Chia Seed. Happily, it was moist, delicious, full of flavor, and most importantly – devoured instantly by everyone in our office!

This recipe makes one large banana bread loaf or two mini loaves. If you decide to make more than one, adjust the recipe accordingly and you can freeze one for later. This is a great treat or a snack for your family that you can serve, knowing that the addition of chia seeds promotes heart and brain health, helps maintain healthy cholesterol and blood sugar, and also promotes healthy digestion and elimination. Here’s how to make it!

1 cup whole wheat flour

¼ cup all-purpose flour

½ cup raw sugar or liquid stevia to taste

½ tsp. baking soda

½ tsp. cinnamon

1 Tablespoon Garden of Life RAW Organics Chia Seed

1 egg

1 ½ bananas, thoroughly mashed

¼ cup Garden of Life Extra Virgin Coconut Oil

1 tsp. salt

1 tsp. vanilla extract

Directions: Preheat oven to 350 degrees. Grease a loaf pan or two mini loaf pans with coconut oil. Beat egg, coconut oil, sugar or stevia, and vanilla extract in a large bowl. Slowly add bananas and beat well. In another bowl, mix flours, baking soda, salt and cinnamon. Slowly add the flour mixture to the sugar mixture and beat well. Add chia seeds last and combine. Pour the batter into the greased loaf pan and bake 30-35 minutes.
