I wanted to share a recipe that I have used when preparing to compete. I usually have strong urges for any and all sweets the closer I get to my competition day, and this recipe seems to be a great fix! It is high in protein, low in sugars and packed with dietary fiber that keeps you full and satisfied! You can opt to cook this, or if you are like me and can’t wait, just eat it raw! The beauty of vegan baking is you can eat most of it raw with no worries! 


Brownie Delights

1 can rinsed black beans

3 tsp vanilla extract

1 Tbs. Garden of Life Virgin Coconut Oil

10 drops of liquid stevia OR 3 pitted medjool dates

1/4 cup unsweetened almond milk

2 Tbs. chia seeds

3 scoops Garden of Life Chocolate RAW Protein Powder


Add all of these ingredients in the food processor and blend until smooth. You may need to add in a bit more almond milk to smooth out of you are eating it raw. Smooth into a non-stick pan and bake at 350 for 20 minutes. Wait until they cool and cut into bars and wrap up for a yummy, guilt free treat!

Is three tablespoons of vanilla extract accurate or should it be teaspoons? Three tablespoons seems like an enormous amount.

Ooops! Thanks for pointing that out Nicole! yes, 3 tbsp is a lot of vanilla!! I'll edit that!

I made the brownies but had to use 1/2 cup of almond milk in my vita mix blender. I also used plant protein and used 2 tablespoons of unsweetened cocoa. The 3 tablespoons of vanilla were fine. Would this make a difference using the cocoa separate from the protein mix. Also how much fat, sugar, carb is in each serving of a square?
