This eye-pleasing salad is great for Meatless Monday, entertaining vegan friends, or as a side dish anytime. We recently served it as a main dish and thought it was extremely satisfying. Loaded with nutrients from all the raw veggies, the quinoa packs a nice protein punch and the flaxseeds add plenty of omega-3s, lignans and fiber. Here’s how to make this super healthy dish:
1 cup organic quinoa
1 bunch of organic romaine lettuce leaves
1 tsp. sea salt
2 green onions, finely chopped
1 garlic clove, finely chopped
4 T fresh lime juice
½ cup extra virgin olive oil
1 red pepper, seeded and finely chopped
1 cucumber, fine chopped
2 ripe avocados, sliced
1 T Garden of Life Raw Organics Golden Flaxseed
Cook quinoa in boiling water as package directs and until tender. Rinse quinoa under cold water and drain.
Place garlic, green onion, and lime juice in a bowl. Add salt and stir to combine ingredients. Add the olive oil and whisk to combine, adding more salt to taste.
Place quinoa, red pepper, and cucumber in a large bowl. Pour half the olive oil mixture into the bowl and stir to combine.
Arrange lettuce leaves in a serving bowl. Mound quinoa mixture on top. Arrange sliced avocados on top of the quinoa and serve.
