All the memes on social media are true—everything Pumpkin Is Upon Us.
Why not? Pumpkin is amazing! One cup of cooked (with no salt) pumpkin has only 49 calories, is high in fiber, low in sugar, has 2g of protein and is a great source of vitamin C, calcium and Iron. It is also loaded with vitamin A ( beta carotene ) which is an antioxidant that helps boost the immune system.
Pumpkin Spiced Lattes seem to be the calling card of autumn’s arrival. I admit that, I too, can fall prey to the call of the PSL, but when not wanting to overindulge (or over spend—those things can put a dent in your wallet!) it’s great to be able to make a healthier version at home.
Pumpkin Spiced Smoothie
16 oz. vanilla almond milk (or milk of your choice)
1 packet of Garden of Life® RAW Protein Marley Coffee Flavor
1 cup of fresh pumpkin puree (recipe here) or canned pumpkin
1-2 Tablespoons apple pie spice
1-2 Tablespoons maple sugar or syrup (optional)
Add almond milk, pumpkin and protein to your blender and mix. Add pie spice and maple syrup/sugar to taste.
You can also do variations on this smoothie if you’d like:
Want more coffee flavor or don’t have Marley Coffee Protein? Use your favorite cold coffee or instant coffee.
Don’t want pumpkin or don’t have any? You could use a banana.
Do you like mocha instead of pumpkin spice lattes? Use a tablespoon or two of your favorite organic chocolate powder instead of pumpkin puree and spices.
