Golden Flaxseed Pumpkin Soup

At Garden of Life®, we've been adding our RAW Organics™ Golden Flaxseed to just about everything. In case you're not familiar with the many health perks of flaxseeds, they are a nutrition powerhouse with the most concentrated source of beneficial lignans, a polyphenol that supports digestion, reproduction, prostate, breast and heart health. As another bonus, flaxseeds are great for beautiful hair and skin.
 
Our premium organic, non-GMO flaxseed has a mild, nutty flavor that tastes wonderful sprinkled on salads, cereal, yogurt or smoothies. They're also fantastic when added to soups, which is why we made sure to add them to this satisfying creamy pumpkin soup.
 
Perfect for chilly fall or winter nights (or when we've turned our air conditioners down too low here in Florida!) this pumpkin soup is easy to make and can serve as a first course or as a meal when paired with a fresh fall salad and sourdough or sprouted bread. With only a few ingredients, you can have it ready in 15 minutes or less.


 
Ingredients:
 
1 15-ounce can of pumpkin purée (organic if available)
2 1/2 cups of organic vegetable broth or chicken broth
1/2 cup cream or unsweetened almond milk
1 tsp. Garden of Life RAW Organics Golden Flaxseed
1 Tblsp. maple syrup
1/2 tsp. nutmeg
1/2 tsp. pumpkin pie spice
 
Preparation:
 
Add pumpkin, broth and spices to sauce pan. Stir over low heat until smooth. Whisk in cream or almond milk until well blended.



Add maple syrup and simmer on low for 10 minutes, stirring frequently and not allowing mixture to boil. Pour into bowls and sprinkle a teaspoon of flaxseeds on each serving.
