Raw Powerhouse Baked Oatmeal

Fans Deborah and Stephen Protheroe have changed their health with Garden of Life products.  One of the tasty changes they have made to their diet is to make this baked oatmeal in cupcake cups, making it great for home and on-the-go! 



2 cups gluten free old fashion oats
1 tsp. baking powder
1/2 tsp. sea salt
1/2 cup chopped nuts
1/2 cup coconut sugar
2 Tbsp. Garden of Life Raw Organics organic flaxseed & organic chia seed
1 cup almond or coconut milk
2 cage free omega 3 eggs
1 1/2 Tbsp. Garden of Life Extra Virgin coconut oil
2 tsp. pure vanilla extract

Optional ingredients:
2 medium apples, shredded + 1 tsp. cinnamon + raisins
1/2 cup pumpkin puree + 1/2 tsp. pumpkin pie spice
1/2 cup frozen or fresh blueberries

Preheat oven 375 degrees. Line large muffin tins with paper liners.

In large bowl mix all dry ingredients. In small bowl mix all wet ingredients(including apples, pumpkin or blueberries, your choice).

Combine all ingredients-adding wet into dry little by little-and fill cups 3/4 full. Bake 25 minutes or until firm and wet ingredients fully absorbed. Makes 6 large muffins.

Muffins may be stored in fridge for a week, and are a great on-the-go breakfast treat.  I made these for my family with pumpkin puree and pie spice.  It's definitely a magical recipe because my family made them disappear!

I just recently experimented with 3Tbsp. of cacao and 2 bananas, smashed. Most delicious! My husband and I are down a total of 100lbs. thanks to our new lifestyle that includes Garden of Life products. True fans!
