Katie Mackey's Beastly RAW Protein Banana-Coconut Oat Muffins

I made these muffins last week and they were a big hit with the whole Brooks Beasts running team...meaning I made them at training camp and they were gone in 15 minutes! Enjoy!

RAW Vanilla Protein Banana-Coconut Oat Muffins

1 large ripe banana

3/4 cup oats

3/4 cup shredded coconut

1/2 cup plain non-fat yogurt

3 eggs

2 scoops GOL RAW vanilla protein powder

1/4 cup sugar

1 tsp baking powder

1 tsp baking soda

1 tsp vanilla

1 1/2 tsp cinnamon

  1. Preheat oven at 350ºF. Place the cupcake liners in the baking sheet

  2. Mix the bananas, yogurt and sugar together in a mixing bowl.

  3. In a separate mixing bowl add the protein powder, oats, cinnamon, coconut, baking powder and soda. Mix dry ingredients together thoroughly.

  4. Mix the wet and dry ingredients, scoop into muffin tins/cupcake liners.

  5. Bake for 15-20 minutes, checking that they are done with a toothpick inserted through the center that comes out clean.

  6. Let them cool and enjoy!
