Christina Murray's Vegan Apple Banana Protein Bites

Do you ever feel rushed to get out of the house in the morning? It was a struggle for me before I had kids… and now with a preschooler it is harder than ever. These Mini Muffins are not only vegan, they are gluten free and sugar free as well! We eat them as breakfast, I pack them in the kiddos lunch… or grab them as a pre or post workout snack.

 

Vegan Banana Oat (protein packed!) Muffin Bites and they’re sugar free!

Two very ripe bananas puréed
1/4 coconut milk
1 T. Cinnamon
1 T. Pure Vanilla
One large chopped apple
One and half scoops of Garden of Life Raw Meal Vanilla (or Raw Protein Vanilla)
1 1/2 c GF Oats

Toss all ingredients in Vitamix or food processor. Scoop 1-2 Tablespoons of batter for each muffin.
Bake at 350 in pre-greased mini muffin tin for 9-11 min depending on oven.
