Healthy Patriotic Pops for the Fourth of July!

Posted by: Ursula Zamora on Monday, July 02, 2012

I have a son who has a sweet tooth the size of Texas. Like a bloodhound, he can sniff out sweets from a mile away. He also loves to help cook and create in the kitchen with me as well, so it’s great when I find recipes that are not only healthier, but taste out of this world. I LOVE it when I can find recipes that also use great ingredients and I loved that this included Garden of Life Extra Virgin Coconut Oil!
Recently Lori at PureFreshDaily (www.purefreshdaily.com) posted a recipe for Raspberry Vanilla Cream Popsicles and when my son saw the photo he said we HAD to make them.

Sure…twist my arm…!

So we gathered our ingredients and in the matter of about 10 minutes we were popping our molds into the freezer and listening to the tick tick tick of the clock until we could try this new popsicle recipe.

We knew they had to be great since the little bits of leftover slurry slushiness was absolutely amazing.

We also made a variation of this recipe, and using our new star shaped molds made some great patriotic pops for July 4th with blueberries in addition to the raspberries for red and blue and using some plain or Greek yogurt with some raw honey for sweetness to make red, white and blue pops.

I think the photos show that they are a hit!

Even with my 15 month old who was running after his brother with his mouth wide open!

Ingredients
• (1) 13.5-oz can organic coconut milk or 2 cups coconut yogurt (whole fat)
• (2) 6-ounce packages of fresh raspberries
• 3 tablespoons raw honey for mild sweetness or 4 tablespoons for a sweeter result
• 1 teaspoon vanilla extract
• 2 tablespoons Garden of Life coconut oil

Instructions
Place all ingredients into a blender. Blend on high until smooth, frothy and creamy. Pour into popsicle mold and insert handle tops or wooden sticks(depending on the type of molds you have). Freeze for a minimum of 3 hours.

Once thoroughly frozen, turn popsicle mold maker on its side, under running hot water (do not allow water to touch popsicles!). This will loosen the popsicle away from sides of the mold, making it easier to remove. After eating your share, wrap remaining popsicles in individual pieces of saran wrap. Store popsicles in a zip lock freezer bag in the freezer.

YIELDS: 10 popsicles
PREP TIME: 10 minutes
FREEZE TIME: 3 hours

Love this! I've been wanting to find a good "recipe" for our own pops so the baby can enjoy them too. :-D
