If you like spice cookies, this one has plenty of spice and even a little “bite” to it that you will appreciate. Add super nutritious Raw Protein Vanilla Spice Chai to the mix and you’ve got a guilt-free cookie to nosh on or pack in a lunch box for the kids! Be sure to check your spice cabinet first, as this recipe uses so many spices that you may need to restock!

2 ¼ cups all-purpose flour
½ cup Garden of Life Raw Protein Vanilla Spice Chai (or two packets)
1 cup Extra Virgin Garden of Life coconut oil OR 1 stick of salted butter, softened
1 egg
1 tsp. baking soda
½ tsp. baking powder
¼ tsp. salt
1 ¾ cups of sugar
2 tsp. ground vanilla bean powder
½ tsp. vanilla extract
1 tsp. ground ginger
1 TBS ground cinnamon
1 tsp. ground cardamom
½ tsp. ground allspice
¼ tsp. ground nutmeg
1/8 tsp. ground black pepper
1/8 tsp. ground cloves

Directions: Heat oven to 350 degrees. Spread parchment paper on baking sheet.

In a large bowl, mix flour, Raw Protein Vanilla Spice Chai, baking powder, baking soda, and salt.

In another bowl, mix sugar, cinnamon, vanilla bean powder, cardamom, ginger, nutmeg, allspice, cloves and pepper. Take out ¼ cup and set aside for later.

Using a mixer, beat butter and sugar-spice mixture left in bowl for several minutes until fluffy. Add egg and vanilla extract until combined. Slowly add dry ingredients and mix until well combined.

Form dough into balls and then roll in the ¼ cup reserved sugar-spice mixture. Place on cookie sheet about 2” apart and bake for 9-10 minutes. Remove and flatten tops of cookies with thumb or a spoon if needed. Cool for several minutes and then move to a cooling rack.

Enjoy the yummiest way to get more protein into your diet!
