Raw Protein Peanut Butter Oatmeal Chewies

These RAW Protein treats are so flavorful that a batch of them disappeared at our Garden of Life office in less than 10 minutes! Made with RAW Protein Vanilla (and also tested with the original flavor of RAW Protein) these chewy cookies are also packing tons of protein from the natural peanut butter in the recipe.

 

Because everyone has different dietary needs, this is a recipe you can make as healthy or as sinful as you prefer. For instance, I love baking with coconut oil, but if you’re reluctant to try it or do not have any on hand, ¼ cup of butter will do the trick. I also like to use almond milk instead of regular milk, and it works great with these chewies. Last of all, if you do not have stevia extract or a few packets of stevia powder, you can opt to use 1-2 cups of sugar if you like your treats extra sweet. For us health-conscious folks at Garden of Life, we thought the peanut butter made these chewies sweet enough! Try any of these versions and let us know how yours turned out! Last thing – I completely forgot to mention the beauty of making these chewies. You can have an entire batch completed in less than 15 minutes because you don’t have to bake them!

 

Ingredients:

 

3 cups rolled old-fashioned oats

 

1 cup of natural brand peanut butter (we used JIF Natural)

 

½ cup vanilla almond milk or regular milk

 

1 tsp. vanilla

 

¼ cup Garden of Life Extra Virgin Coconut Oil (can also substitute ¼ cup butter if you prefer)

 

1 scoop or one packet of Garden of Life RAW Protein Vanilla OR regular flavor RAW Protein

 

1 Tablespoon stevia extract

 

In a large saucepan, mix the stevia extract or sugar, coconut oil, and almond milk. Bring to a full boil for one minute and stir the mixture constantly so it does not stick to the pan. Remove from heat and add peanut butter and vanilla, stirring until peanut butter is completely melted. Stir in the oats and RAW Protein and stir well with a wooden spoon until combined. Quickly drop spoonfuls on sheets of wax or parchment paper and cool completely. Enjoy!!

Could there be a typo of the ingredient amounts in the recipe you listed? I just made these, and there is not enough liquid ingredients to cover the oats and make cookies. They taste good, but couldn't make cookies with them.

Hi Angie-I checked the recipe and the liquid ingredients of 1/2 cup almond milk or milk and 1T of stevia extract were definitely all I needed to make these work. If you still have problems with it, you can try adding 1T of extra milk to the mix at a time and then stir to check the consistency of the batter.

I had the same problem. But I also noticed the peanut butter didn't really liquefy. I used Santa Cruz organic creamy peanut butter. I wonder if it could be because Jif contains some palm oil and the one I used does not. I think I'll try it again and just increase the coconut oil by a couple tablespoons.

I saw this recipe in a magazine and the picture with it in no way matched what the cookies actually looked like! I see your site shows the cookies as they actually look.

QUESTION: I am amazed at the quality of one ingredient called for. I use stevia for all baking. But 1 Tbs of stevia extract? You are not saying whether this should be the powder or the liquid and it does make a difference seeing as the powder has a bit of a bitter after taste to it. PLEASE CLARIFY: 1 TBS of powder or of the liquid stevia extract? Thank you.

I saw this recipe in the health magazine and made them into balls and refrigerated them and they turned out fantastic!! I actually used the lowfat, sugar free peanut butter to make them even more healthy!! Can I get the nutrition break down of these cookies please?
