Avocado Salad Wraps

Avocado Salad Wraps

Serves 6

 

Ingredients:
2 avocados, cubed
1 red pepper, diced
2 Tablespoons of diced red onions
3 garlic cloves, minced
¼ cup fresh cilantro, chopped
2 teaspoons fresh lemon juice
6 to 8 romaine lettuce leaves, roughly chopped
6 gluten-free wraps

Directions:
Mix all ingredients, except the wraps, in a bowl. Scoop out approximately ½ cup mixture into each gluten-free wrap and roll. Serve.

Cucumber Tomato Salad

Cucumber Tomato Salad

Ingredients:
1 medium cucumber, diced
2 medium tomatoes, diced
1 small bunch of cilantro, chopped
1 Tablespoon Vegenaise®
1 small handful raisins (optional)

Directions:
Mix all ingredients and serve cold.

RAW Walnut Tacos

RAW Walnut Tacos

Ingredients:
1½ cups raw walnuts, ground in food processor
1½ teaspoons ground cumin
¾ teaspoon ground coriander
2 teaspoons Bragg brand liquid aminos
pinch of cayenne pepper

Directions:
Mix all ingredients in food processor and pulse into a coarse mixture. Mix and serve in lettuce wraps with pico de gallo and guacamole
