Perfect Snack Recipes

Fresh Fruit Smoothies

One of the most popular fruits, the orange is a delightful snack or recipe ingredient. Oranges are known as an excellent source of vitamin C. In addition, they contain 170 different phytonutrients.

4 cups fresh-squeezed orange juice
2 frozen bananas
2 cups grapes
2 cups packaged frozen tropical fruit (pineapple, blueberries, and/or strawberries)
Nutritious whole-food powders (optional choice is Garden of Life Perfect Meal)

Equipment: Blender

Peel and freeze bananas. Blend ingredients in a Vita-Mix until smooth and creamy. Serve in a tall glass with desired fruit toppings. Serves 8.

Key Lime Mousse

Limes are an excellent source of vitamin C, contain antioxidant properties, and help to build a strong immune system.

3 avocados
½ cup lime juice
dash of Celtic sea salt
3 bananas
6 lime wedges
½ cup lime agave
2 Tbsp. lime zest
3 kiwis
6 raspberries

Equipment: Blender

Process all ingredients, except the fruits, in the blender. Serve in a small glass dessert bowl and garnish with fruit toppings. Serves 6.

Nutty Dates

Macadamia nuts contain a significant amount of protein comprising all the essential amino acids.

1 cup nuts (walnuts, pecans, and/or almonds)
1 cup shredded coconut
2 Tbsp. creamy raw honey
1½ tsp. Celtic sea salt
1 tsp. cinnamon (optional)
1 cup macadamia nuts
1 cup pitted dates, soaked
1 cup raisins
1 Tbsp. orange zest (optional)
¼ cup Garden of Life Super Seed (optional)

1 cup sesame seeds
1 cup finely ground coconut

Equipment: food processor and zester

Process walnuts, pecans, and/or almonds in a food processor until crumbly. Remove to a large mixing bowl. Process macadamia nuts and coconut until crumbly. Add to the nut mixture. Process dates and honey until creamy. Add to the nut mixture. Add remaining ingredients and mix well with hands until thoroughly blended. Shape into small balls and roll in sesame seeds and/or finely ground coconut. These are wonderful to freeze and make for a quick, easy, satisfying snack. Makes 40-50 Nutty Dates.
