Sensational Spring Mix Salad
Serves 4-6

Ingredients:
1 container of organic spring mix salad, rinsed thoroughly
1 small container of crumbled Gorgonzola cheese
4 ounces of pecans, sliced
1 quart fresh strawberries, sliced
extra virgin olive oil (to taste)
raspberry walnut dressing (to taste)

Directions:
Place contents of bagged organic spring mix salad (rinsed) into a large salad bowl. Sprinkle the salad with crumbled Gorgonzola cheese, sliced pecans and sliced strawberries. Lightly pour extra virgin olive oil and raspberry walnut dressing over the top. Serve.

 

Pasta Perfect
Serves 6-8

Ingredients:
1 12 ounce package of kamut spiral pasta
2 large tomatoes, diced
1 large green pepper, diced
1 can of large black olives, sliced
8 ounces of fresh parmesan cheese, shredded
1 large bottle of zesty Italian salad dressing
6 tablespoons extra virgin olive oil

Directions:
Cook the pasta according to the directions and set aside to cool. In a large bowl, pour in the zesty Italian dressing and extra virgin olive oil; add diced tomatoes, pepper, black olives and parmesan cheese. Add the cooled pasta & mix well with the other ingredients. Refrigerate for about two hours prior to serving. Top with extra parmesan cheese, if desired.

 

Spinach & Asparagus with Penne Pasta
Serves 4

Ingredients:
8 ounces of whole grain penne pasta, uncooked
6 slices of turkey bacon, crumbled
5 cups of fresh spinach leaves
¼ cup of sweet onion, chopped
1 pound of one-inch sliced asparagus
2 cups of chicken broth
1 cup of Asiago cheese, shredded and divided
Black pepper to taste


Directions:
Cook pasta according to directions; drain and keep warm. Cook turkey bacon in a large skillet until it’s crisp; remove, cool and crumble. Saute onion for about one minute in skillet used for cooking the turkey bacon. Add asparagus and chicken broth to the large pan and bring to a boil. Reduce heat and simmer 5 minutes or until the asparagus gets tender. Add pasta, spinach, one half of the Asiago cheese and pepper to the pan. Toss well. Sprinkle with the remaining Asiago cheese and the crumbled turkey bacon. Serve.
