Grilled Chicken Salad with Savory Strawberry Dressing
Serves 5
Ingredients
One pound of organic, boneless, skinless chicken breasts; grilled and sliced
10 cups of arugula
10 ounces of snow peas, stemmed
8 ounces of goat cheese
½ cup of sliced pecans
1 quart of fresh strawberries, sliced
Savory Strawberry Dressing Ingredients
1 cup of fresh strawberries
1 Tablespoon of apple cider vinegar
1 teaspoon ground black pepper
¼ teaspoon sea salt
1 teaspoon stevia
1 Tablespoon almond oil
Directions
Grill the chicken; let cool slightly and slice. Set aside. Combine arugula, snow peas, goat cheese, pecans and strawberries—adding the pecans and strawberries to top the salad. In a blender, blend together the ingredients for the dressing until at desired consistency. Pour dressing on salad and serve.
