Issue 153: Flax It Up!


Flaxseed Crackers
Makes about 20 to 30 crackers

2 cups of flaxseeds
2 cups of pure water
¼ cup of nama shoyu
sea salt, to taste
minced herbs, if desired
1 Tablespoon of extra virgin olive oil

Place the flaxseeds and water in a large bowl. Cover and set aside for about 30 minutes. After letting the flaxseed mixture set that amount of time, slowly add the other ingredients to the mixture. Blend well. On two olive oil-greased cookie sheets spread the mixture to about 1/8th to 1/16th of an inch thick and bake at 160 degrees for about 3 hours. After three hours, flip the mixture on the cookie sheets and bake at 160 degrees for another 3 to 4 hours. Turn off the oven and let set for several hours or overnight. Break cracker mixture into several pieces and put them in a container. Serve with flaxseed & walnut hummus (below) or other dips.




Flaxseed & Walnut Hummus
Serves 4 to 6

2 cups of cooked chickpeas, drained
1/3 cup of walnuts
1 clove of garlic, peeled
2 Tablespoons of flaxseeds, ground
1/3 cup of pure water
4 Tablespoons of lemon juice
¼ teaspoon of ground cumin
½ teaspoon of paprika
dash of chili powder

Using a food processor, blend together the chickpeas, walnuts, garlic, flaxseeds, water and lemon juice. Blend until the mixture is smooth, adding more water, if necessary. Add the cumin, paprika and chili powder and blend for about another 30 to 60 seconds. Serve with flaxseed crackers, veggies or as a filling for a wrap.



No Bake Flaxseed Cookies
Makes about a dozen cookies

4 cups flaxseeds
¼ cup of extra virgin coconut oil
1 cup of raw honey

In a food processor, grind the flaxseeds. Add the coconut oil and raw honey. Blend until the mixture forms a dough. Take the dough and form one dozen cookies. Top with nuts or raisins—or whatever you wish!
