Raspberry-Almond Salad

 

Raspberry-Almond Salad
Serves 5

Ingredients:
10 cups organic spring salad mix
1 medium avocado, sliced
1 small red onion, thinly sliced
2 cups fresh, organic raspberries
1/3 cup sliced raw almonds
healthy salad dressing of your choice—such as raspberry walnut or extra virgin olive oil & apple cider vinegar mixture

Directions:
In a large serving bowl, combine the spring salad mix, the sliced avocado, red onion slices, raspberries and almonds—with almonds going on last. Serve with your choice of healthy salad dressing.

   

 

 

 



Probiotic Fruit Dip


Probiotic Fruit Dip 
Makes about 3 cups

Ingredients:
2 cups of organic, probiotic-rich, whole, plain yogurt
½ cup raw honey
¾ cup raw tahini

Directions:
Combine all ingredients, mixing until smooth. Serve with apples, strawberries or bananas.

 


 


Berry Trio



Berry Trio Dessert
Serves 10 to 15

 

Ingredients:
2 cups fresh, organic blueberries
2 cups fresh, organic blackberries
2 cups fresh, organic raspberries
stevia, to taste
3 cups steel-cut oats
2 cups organic brown rice flour
3 Tablespoons ground cinnamon
1 teaspoon ground nutmeg
1 cup of organic butter

Directions:
Preheat oven to 350 degrees. In a large bowl, mix together the blueberries, blackberries, raspberries and a sprinkle of stevia. In a separate large bowl, combine the rest of the stevia (to taste), the steel-cut oats, brown rice flour, cinnamon and nutmeg—and then cut in the butter until the mixture is crumbly. Press half of the oats & flour mixture into the bottom of a buttered 9 x 13 inch pan. Pour the berry mixture on top and then sprinkle the remaining half of the oats & flour mixture over the berries. Bake at 350 degrees for 35-45 minutes or until the fruit bubbles and the topping is golden-brown. Serve warm—with or without organic ice cream.
