Raw Cheesecake Pudding

Raw Cheesecake Pudding
Serves 2 to 4

Ingredients:
1 cup raw cashew butter
1/3 cup lemon juice
1/3 cup raw honey
4 dates
1 teaspoon vanilla
½ teaspoon Celtic sea salt

Directions:
In a blender, chop dates first to make sure they will integrate into the pudding smoothly. Combine all remaining ingredients in blender. Blend until smooth. Refrigerate and serve cold.

 


 

 



Raw Brownie Bites


Raw Brownie Bites
Makes about 24 bite-sized treats

Ingredients:
2 cups whole, raw walnuts
2½ cups Medjool dates, pitted
1 cup raw cacao
1 cup raw unsalted almonds, roughly chopped
¼ teaspoon Celtic sea salt

Directions:
Place walnuts in food processor and blend on high until the nuts are finely ground. Add the cacao and salt. Pulse to combine. Add the dates one at a time. The consistency should be like cake crumbs but, when pressed, will easily stick together. (If the mixture does not hold together well, add more dates.) In a large bowl, combine the walnut-cacao mix with the chopped almonds. Press into a lined cake pan or mold. Place in freezer of fridge until ready to serve Store in an airtight container.


 


Chocolate Mousse



Chocolate Mousse
Serves 2 to 4

Ingredients:
½ cup Medjool dates, soaked
½ cup raw honey
1 teaspoon vanilla extract (optional)
1 to 1 and ½ cups mashed avocado (about 2-3 avocados)
3/4 cup raw organic cocoa powder
½ cup water

Directions:
Blend or process dates, raw honey and vanilla extract until smooth. Add mashed avocado and cocoa powder and process until creamy, stopping to scrape down the sides of the bowl with a spatula if needed. Add the water and process until smooth. Serve at room temperature or chilled. Store in a sealed container in the refrigerator up to 3 days or in the freezer up to 2 weeks.

Variations:

Fudgesicles: Freeze the Chocolate Mousse in ice cube trays. Thaw for 5 minutes before serving.
Chocolate Sauce or Fondue: Increase water to 1 cup. This sauce is rich and smooth. It is delicious alone or served as fondue with fresh strawberries, bananas or tangerines.
