Stress-Free Raw Chocolate Cake
Makes one 5-inch round cake
Ingredients:
2 cups of raw walnuts
12 pitted Medjool dates
1/3 cup raw cacao powder
½ teaspoon vanilla extract
2 teaspoons pure water
dash of sea salt
¾ cup of fresh organic raspberries (optional)
Directions:
Blend raw walnuts and dates in a food processor until well blended. Add the raw cacao powder, vanilla extract, water and sea salt until the mixture begins to stick together. Remove mixture from the food processor and place on a serving plate. Form the mixture into a 5-inch round cake. Chill in the refrigerator for two hours. If serving after the two hours, then decorate the cake with the raspberries and serve. If not serving immediately, then cover with plastic wrap. The cake will be good for three days in the refrigerator or for two weeks in the freezer.
