Almond Butter Cookies

Dark Chocolate Almond Butter Cookies

Ingredients:
1 cup raw almond butter
½ cup almond flour
1/3 cup maple syrup
1 egg
1 Tablespoon vanilla
½ teaspoon salt
½ teaspoon baking soda
¼ teaspoon baking powder
½ cup dark chocolate, broken into pieces (at least 70% cocoa)

Directions:
Preheat oven to 350 degrees Fahrenheit. Place all ingredients in a food processor and process until smooth. Chill dough for 20 minutes. Roll 2 Tablespoons of dough into balls and place on parchment paper-lined baking sheet. Bake for 10 minutes.

Raw Apple Crisp

Raw Apple Crisp

Ingredients:
8 apples, peeled and chopped
1 cup raisins, soaked and drained
2 teaspoons cinnamon, divided
¼ teaspoon nutmeg
2 Tablespoons lemon juice
2 cup walnuts
1 cup pitted dates
1/8 teaspoon sea salt

Directions:
Place 2 apples, raisins, 1 teaspoon cinnamon and nutmeg in a food processor and process until smooth. Toss remaining chopped apples with lemon juice in a large bowl. Pour apple-raisin puree over apples and mix well. Spoon mixture into a medium size baking dish and set aside.

Crumble Directions:
Pulse walnuts, dates, 1 teaspoon cinnamon and sea salt in a food processor until coarsely ground. Be careful not to over mix. Sprinkle mixture over apples and press down lightly with your hands. Serve immediately or let sit for a few hours for the flavor to marinate.

Brownie Delights

Brownie Delights

Ingredients:
1 can rinsed black beans
3 teaspoons vanilla extract
1 Tablespoon Garden of Life extra virgin coconut oil
10 drops of liquid stevia OR 3 pitted Medjool dates
¼ cup unsweetened almond milk
2 Tablespoons chia seeds
3 scoops Garden of Life Chocolate RAW Protein Powder

Directions:
Add all of these ingredients in the food processor and blend until smooth. You may need to add in a bit more almond milk to smooth out if you are eating it raw. Smooth into a non-stick pan and bake at 350 for 20 minutes. Wait until they cool and cut into bars and wrap up for a yummy, guilt-free treat!
