Blueberry Fruit Salad

Serves:
2 to 4
Organic Ingredients:
  • 2 cups organic blueberries
  • 2 cups cubed organic jicama
  • 2 cups cubed organic watermelon
  • 1 cup chopped organic peaches
  • 1/4 cup chopped fresh mint
  • juice of 1 lime
  • 1 teaspoon lime zest
Directions:
  1. Place all chopped fruit into a large bowl and toss in lime, zest and mint. (Optional: add a pinch of salt.)
  2. Serve as a side, dessert or breakfast.
