Ingredients

  • 6 cups cauliflower florets, cut into bite-sized pieces

  • 1 yellow bell pepper, diced

  • ½ cup diced red onion

  • ¼ cup sliced Castelvetrano olives

  • ½ cup chopped curly parsley (plus more for garnish)

Dressing:

Preparation

  1. Mix all dressing ingredients together until well combined.

  2. Toss dressing over all salad ingredients then garnish with additional parsley.

  3. Store in refrigerator for up to 5 days.
