You are going to love this yummy vegan, chocolate, protein bar recipe. Why? Because it’s packed with all the good stuff you need, and leaves out the stuff you don’t want like gluten, dairy, and soy. As the name implies, these Power Protein Bars are full of healthy ingredients to fuel your day including Creamy Protein with Oatmilk, chia seed, flaxseed, and extra virgin coconut oil—all wrapped up into delicious, creamy chocolate bars. Whip up a batch of this Power Protein Bar recipe and keep in the fridge for up to 10 days—but we doubt they will last that long.

Preparation

  1. Place oats, cashews, protein powder, chia seeds, and flaxseed into a food processor using the “s” blade. Process until well combined.
  2. Add in peanut or almond butter, coconut oil and maple syrup. Process again until the batter begins to stick together.
  3. Place batter into an 8x8 pan and press down with hands. Refrigerate for one hour to let set.
  4. To make chocolate coating, using a double broiler, melt the chocolate chips together with the coconut oil. Spread melted chocolate over the bars and let set (20 minutes in the refrigerator).
  5. Cut into equal pieces and store in refrigerator for up to 10 days.
