Sweet and Savory Mexican Corn Salad

Did you know the benefits of corn include plenty of gut-healthy fiber, antioxidants, and B vitamins? This Mexican corn salad recipe is a delicious way to enjoy it, and it's a healthier twist on the classic. We lightened it up by swapping traditional mayonnaise for Greek yogurt and added a scoop of our unflavored fiber powder to the creamy yogurt dressing for an extra 5 grams of filling fiber without changing the flavor. To make Mexican corn salad, simply sauté corn kernels until golden and whip up a quick dressing. Then, toss them together with extra veggies, fresh cilantro, crumbly Mexican cheese, and diced avocado for a colorful side dish.

Ingredients

  • 1 Tbsp. avocado or coconut oil
  • 1 16-ounce bag frozen corn kernels (about 4 cups)
  • ½ cup plain fat-free Greek yogurt
  • Juice of 1 medium lime
  • 1 tsp. honey
  • ½ tsp. chili powder
  • ½ tsp. ground cumin
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 1 Tbsp. Garden of Life Unflavored Dr. Formulated Organic Fiber
  • ¼ cup red onion, finely diced
  • 1 jalapeño, seeded and diced
  • 1 ripe avocado, diced
  • ⅓ cup crumbled Cotija cheese (about 1.5 ounces)
  • 2 Tbsp. chopped fresh cilantro

Preparation

  1. Heat oil in a large skillet over medium-high heat. Add the corn kernels and cook, stirring occasionally, until corn is golden and lightly charred in spots, about 6 to 8 minutes. Remove from heat and let cool slightly.
  2. While the corn cools, make the dressing. In a small bowl, stir together the Greek yogurt, lime juice, lime zest, honey, chili powder, cumin, salt and pepper until smooth. Taste and adjust seasoning, if needed.
  3. In a large mixing bowl, combine roasted corn, red onion, jalapeño, avocado, Cotija, and cilantro. Drizzle with the dressing and toss gently to coat.
  4. Transfer to a serving dish and garnish with extra Cotija, cilantro, and a sprinkle of chili powder, if desired. Serve right away or chill.
