A Baba Ghanoush recipe with a boost—a boost of turmeric that is! This will become your next party smash hit or your anytime snack favorite.

Serves: 4

Ingredients

Use Organic if possible:

Chopped parsley for garnish, pita chips and veggies for dipping

Preparation

  1. Cut eggplant into wedges (about 6-8 wedges total). Place on a cookie sheet and drizzle olive oil over the pieces and sprinkle with sea salt.

  2. Heat broiler to high and broil the eggplant for 6 minutes, flip the pieces over and broil for another 6 minutes then remove from oven (you can also use a grill if you prefer).

  3. Remove skins from eggplant wedges and place flesh in a strainer and let the liquid fall into a bowl underneath (this takes about 10 minutes).

  4. Add eggplant flesh into a bowl with the garlic, lemon, salt, pepper and turmeric and whisk until smooth. Gradually add in tahini and continue to whisk. Gradually add in the olive oil, continuing to whisk.

  5. Place baba ghanoush into a bowl, smooth out with a back of a spoon, drizzle olive oil on the top and sprinkle on the chopped parsley.

  6. Store in refrigerator for up to 5 days.
