Here is a recipe that my girlfriend has been making for us for a few months now-we love it!
Strawberry Banana Chia Seed Pudding
1 cup strawberries
1 1/4 cup almond milk
1-2 tablespoons cacao nibs
5 tablespoons Garden Of Life chia seeds
1/2 teaspoon vanilla extract
2-4 drops liquid stevia, optional (depending on ripeness of banana and sweetness of strawberries, adjust to taste)
Combine banana, strawberries, almond milk, vanilla extract, and stevia, if using, in Vitamix or other blender. Blend till puree is a smooth liquid. Add in cacao nibs and pulse to combine. Add in chia seeds and pulse to combine. Pour contents into glass dish and cover; refrigerate overnight or for at least a couple hours to allow to set.
Top with coconut flakes for an extra flavor boost!
