The Perfect Protein Pancake

Serves: Makes 4 Large Pancakes

Ingredients:

Directions:

  1. Place all ingredients into a blender and blend until smooth.
  2. Heat griddle or pan to medium heat, adding 1 tbsp of coconut oil to coat the surface.
  3. Measure out 1/4 of the batter to make 1 pancake, pouring it onto the griddle (if you have enough space, you could cook all 4 at once!). Flip after ~3 minutes and then let cook for another 2 minutes.
  4. Top with chopped nuts, butter, blueberries, strawberries, coconut flakes - whatever your heart desires!
You can freeze these pancakes for up to one month or refrigerate for 3 days.
