Mango Cranberry Kale Salad

Serves: 4

Use Organic:

  • 2 bunches of kale
  • ¼ cup chopped dried mango
  • ¼ cup dried cranberries
  • ¼ cup pine nuts
  • 2 Tablespoons grated parmesan cheese (optional)
  • ½ avocado
  • ¼ cup avocado oil
  • 1½ Tablespoons lemon juice
  • 1 Tablespoon maple syrup
  • ¼ teaspoon sea salt

Directions:

  1. Remove stems from kale and then finely chop and place in large bowl.
  2. Add ½ avocado, avocado oil, salt, lemon juice, and maple syrup.
  3. Massage kale with your hands to incorporate the dressing and soften the kale (do this for about 1 minute).
  4. Add remaining ingredients and toss.
  5. Serve immediately or store in refrigerator for up to 2 days.
