Raw Coffee “Cheesecake”

Serves:

Use Organic:
Crust:
  • 1 ½ cups walnuts
  • 8 large Medjool dates
  • 1 Tablespoon Garden of Life Coconut Oil
  • ¼ teaspoon sea salt
Filling:
  • 2 cups cashews (soaked in water for 2 hours and rinsed)
  • 1½ cups non dairy milk (such as “Ripple”)
  • ¾ cup melted Garden of Life Coconut Oil
  • ¾ cup maple syrup
  • ½ cup cacao
  • ½ cup cold brewed coffee
  • ¼ teaspoon sea salt
Chocolate Sauce:
  • ½ cup maple syrup
  • ½ cup non dairy milk (such as “Ripple” or Almond Milk)
  • ¼ cup cacao
  • ¼ cup Garden of Life Coconut Oil melted
  • ¼ cup cashew butter
  • ½ teaspoon vanilla extract
Directions:
  1. To make crust, place walnuts in the food processor with salt and process until fine.
  2. Add dates (pitted) and coconut oil and process again until well combined then press into a 12 inch Spring Form Pan.
  3. To make the filling, blend all ingredients in a high speed blender until very smooth then pour on top of the crust.
  4. Place in freezer to set (2 hours) then remove and drizzle chocolate sauce on top (to make chocolate sauce, blend all ingredients until smooth).
  5. If desired, add crushed chocolate covered espresso beans on top.
  6. Store in freezer for up to one month.
