Raw Coffee “Cheesecake”

Serves:
8-10 Use Organic:
Crust:
- 1 ½ cups walnuts
- 8 large Medjool dates
- 1 Tablespoon Garden of Life Coconut Oil
- ¼ teaspoon sea salt
Filling:
- 2 cups cashews (soaked in water for 2 hours and rinsed)
- 1½ cups non dairy milk (such as “Ripple”)
- ¾ cup melted Garden of Life Coconut Oil
- ¾ cup maple syrup
- ½ cup cacao
- ½ cup cold brewed coffee
- ¼ teaspoon sea salt
Chocolate Sauce:
- ½ cup maple syrup
- ½ cup non dairy milk (such as “Ripple” or Almond Milk)
- ¼ cup cacao
- ¼ cup Garden of Life Coconut Oil melted
- ¼ cup cashew butter
- ½ teaspoon vanilla extract
Directions:
- To make crust, place walnuts in the food processor with salt and process until fine.
- Add dates (pitted) and coconut oil and process again until well combined then press into a 12 inch Spring Form Pan.
- To make the filling, blend all ingredients in a high speed blender until very smooth then pour on top of the crust.
- Place in freezer to set (2 hours) then remove and drizzle chocolate sauce on top (to make chocolate sauce, blend all ingredients until smooth).
- If desired, add crushed chocolate covered espresso beans on top.
- Store in freezer for up to one month.
