Turmeric Boost Confetti Salad

Serves: 4

Use Organic::

Dressing:

  • ¼ cup olive oil
  • 1 Tablespoon lemon juice
  • 1 Tablespoon honey (or maple syrup)
  • 1 Tablespoon apple cider vinegar
  • ½ Tablespoon grated ginger root
  • 2 garlic cloves minced
  • 1 teaspoon Garden of Life mykind Organics Turmeric Boost
  • ¼ teaspoon sea salt
  • Pinch of cayenne pepper

Salad:

  • 1½ cups finely chopped cauliflower
  • 1½ cups finely chopped broccoli
  • 1½ cups finely chopped carrots
  • ½ cup cherry tomatoes sliced in half
  • ¼ cup chopped cilantro
  • ¼ cup chopped parsley
  • ¼ cup raisins
  • ¼ cup pine nuts

Directions:

  1. Whisk together dressing ingredients until smooth and set aside.
  2. In a large bowl, combine all salad ingredients and then pour dressing over salad and toss until well combined.
  3. Serve with avocado slices if desired.
  4. Salad lasts 2-3 days refrigerated.
