Change up your daily scoop of protein powder by enjoying it in pudding form with this Protein Pudding Parfait recipe. It’s quite simple (we like that!) to make protein pudding—just mix your favorite Garden of Life protein flavor with less milk than you would to make a protein shake. Here, we used Raw Organic Protein in vanilla flavor and layered the pudding with a quick, homemade chia-berry jam, granola, and coconut flakes. Try this Protein Pudding Parfait for a quick and filling snack or breakfast.

Ingredients

For the fruit layer: 

  • ½ cup frozen mixed berries  
  • 1 Tbsp. water 
  • ½ Tbsp. chia seeds 
  • 1 tsp. honey

For the pudding: 

For assembling: 

  • 2 Tbsp. granola, optional 
  • 1 Tbsp. unsweetened shredded coconut, optional 

Preparation

  1. Place berries and water in a small saucepan set over medium-high heat. Cook until berries begin to thaw and release liquid. Reduce the heat to medium and stir in the chia seeds. Continue cooking until chia seeds soften and the berries thicken, about 5 minutes. Remove from heat and stir in honey. 
  2. Place protein powder in a small mixing bowl. Add almond milk and vanilla extract and stir until smooth and no lumps remain. Let the pudding sit to thicken for 5 to 10 minutes while the berries cool down to room temperature. 
  3. To assemble, layer half the protein pudding in the bottom of a small jar. Top with half the berry mixture. If using granola, add 1 tablespoon and half of the coconut. Repeat layers, finishing with a sprinkle of granola and coconut on top. Enjoy immediately or refrigerate for several hours.
