  1. Line a baking sheet or tray with parchment paper. Set aside.

  2. In a mixing bowl, stir together peanut butter, protein powder, honey, vanilla extract, and 1 tablespoon of melted coconut oil. The mixture should pull together into a ball, similar to a stiff cookie dough.

  3. Use a tablespoon or cookie scoop to divide the peanut butter mixture into 24 balls. Use your hands to roll each tablespoon into a round ball. Line up the balls on the parchment lined sheet. Chill the balls in the freezer until firm, about 15 to 30 minutes.

  4. Place the chocolate chips in a small bowl and melt in the microwave. When chocolate is melted, add remaining 1 tablespoon of coconut oil and stir until smooth.

  5. Remove the peanut butter balls from the freezer. Use a fork or toothpick to pick up each ball and dip in the chocolate, leaving a small amount of peanut butter exposed on top. Let excess chocolate drip off before transferring the chocolate dipped balls back to the baking sheet.

  6. Use a spreader or your finger to smooth the hole in the top of the buckeyes. When all of the balls are coated in chocolate, return to the freezer until the chocolate is set, about 15 to 30 minutes.

  7. Store the peanut butter buckeyes in an airtight container in the refrigerator and serve chilled.
