These Chocolate Pistachio Bliss Balls are inspired by our beautiful planet. Made with plant-based ingredients, including almond butter, hemp seeds, oats, dates, pistachios, and vegan chocolate protein powder, they’re a good source of protein, healthy fat, and fiber. Chocolate Pistachio Bliss Balls are delicious and nutritious on their own, but you can also decorate them for a festive Earth Day snack. We rolled them in crushed pistachios and added a drizzle of coconut butter colored with blue matcha to resemble planet earth.

Ingredients

For decorating: 

  • ¼ cup unsalted shelled pistachios, finely chopped 
  • 2 Tbsp. coconut butter 
  • 1-2 Tbsp. unsweetened almond milk 
  • ⅛ tsp. butterfly pea powder or blue spirulina 

Preparation

  1. Place ¼ cup chopped pistachios in a food processor and process until finely chopped. Transfer to a shallow bowl and set aside. 
  2. Add protein powder, oats, almond butter, dates, hemp seeds, ¼ cup pistachios, and honey to the food processor. Process until all ingredients are finely chopped and the mixture begins to pull away from the sides of the bowl. The mixture should be slightly sticky, but not wet. If the mixture is too dry, add 2 tablespoons of cool water and process again. Repeat, adding more water, if needed. 
  3. Add the mini chocolate chips and pulse the food processor to incorporate. 
  4. Use clean, damp hands to roll the mixture into balls, about 1 ½ inches in diameter. Roll each ball in the reserved chopped pistachios. Place bliss balls on a parchment lined sheet pan. 
  5. Melt the coconut butter in a small microwave-safe bowl. Stir in 1 tablespoon of unsweetened almond milk at a time until the glaze drips off a spoon, but isn’t runny. Stir in the butterfly pea powder or spirulina to color the glaze. 
  6. Use a small spoon to drizzle the glaze over the bliss balls. Place the sheet pan in the freezer for 15 minutes to set the glaze. 
  7. Transfer bliss balls to an airtight storage container and store in the refrigerator. 

Note: If dates are hard, place them in a small bowl, cover them with hot water, and let them soak for 5 minutes. The hot water will soften the dates. Drain dates and proceed with the recipe.
