Strawberry Pie

Starting with the crust made with walnuts, dates and coconut oil, and ending with a strawberry topping to die for, our Strawberry Pie recipe will quickly become a favorite with its better-for-you ingredients. Serves: 8-12
Ingredients
For base crust:
- 2 ½ cups walnuts
- 1 ½ cups dates, pits removed
- 2 tsp. Garden of life Coconut Oil
For pie filling:
- 1 ½ cups raw cashews (soaked overnight 8-12 hours)
- 1 ½ cup fresh strawberries, sliced
- ½ cup Garden of life Coconut Oil, melted
- 1 scoop Garden of life Vanilla Raw Organic Protein Powder
- 1 tsp. vanilla extract
- ⅓ cup coconut syrup
- 1 tsp. grated lemon zest
- 3 Tbsp. lemon juice
- ¼ tsp. salt
For pie toppings:
- 1 cup fresh strawberries, sliced
- 2 Tbsp. water
- 2 Tbsp. maple syrup
- 1 Tbsp. lemon juice
- ¼ tsp. grated lemon zest
- Extra strawberries, for garnish (optional)
Preparation
- Grease a 9-inch tart pan with coconut oil and set it aside.
- In a food processor, combine walnuts, dates, and coconut oil. Blend on high speed for 2-3 minutes until it forms a coarse texture.
- Transfer the date mixture to the greased tart pan. Press firmly with your fingers all the way up until it's uniformly spread. Place the prepared crust in the refrigerator until the filling is ready.
- Next, place all the pie filling ingredients into a high-speed blender and blend until smooth. (If needed, add 2 tablespoons of water to help grind smoothly).
- Pour the prepared filling over the crust and refrigerate the pie for 6 hours.
- Meanwhile, prepare the topping. In a medium skillet, combine strawberries, water, maple syrup, lemon zest, and lemon juice. Bring the mixture to a simmer over medium-high heat. Cover the skillet with a lid and stir occasionally. Allow the strawberries to simmer until they are slightly softened, and a syrup forms, typically taking about 6 to 8 minutes. Once done, set the skillet aside to cool.
- Before serving, remove the tart pan and transfer the tart to a serving platter. Garnish the tart with freshly sliced strawberries.
- Gently slice the tart and top it with the prepared strawberry topping before serving.
