Protein Banana Ghost Pops

Ingredients

3 medium bananas

1 cup plain whole milk Greek yogurt

2 Tbsp. maple syrup

2 Tbsp. milk (dairy or plant-based)

½ tsp. pure vanilla extract

24 standard chocolate chips (less than 1 Tbsp.)

12 mini chocolate chips (¼ teaspoon)

12 popsicle sticks
Preparation

Line a sheet pan or tray with wax paper or freezer paper.

Peel the bananas. Cut each banana in half crosswise on a slight angle. Slice each banana half lengthwise to create four quarters.

Gently insert a popsicle stick into each banana pop. Arrange the pops on the lined sheet pan. Freeze until bananas are firm, at least 1 hour.

In a 2-cup liquid measuring cup or tall mug, mix together the yogurt, maple syrup, protein powder, milk, and vanilla extract. If your yogurt mixture is too thick, add an additional tablespoon of milk.

Remove the banana pops from the freezer. Holding on to the popsicle stick, dip each banana pop into the yogurt mixture, letting the excess runoff. You can also use a spoon or the side of the cup to gently remove excess yogurt. Place each pop back on the cold sheet pan after dipping. Press two standard chocolate chips, pointy side down, into each pop to create “eyes” and one mini chocolate chip to create a “mouth.” You may have a bit of leftover yogurt mixture. You can dip other fruit, like strawberries, to freeze or eat as is!

Return the sheet pan to the freezer. Freeze until yogurt is hardened, at least 2 hours. Serve frozen. Store frozen pops in a sealed container or storage bag in the freezer.
