Ingredients

Glaze:

  • 1/4 cup coconut butter, melted

Preparation

  1. In a medium bowl, whisk together the oats, flour, collagen, baking powder, cinnamon, and salt. In a separate bowl, whisk together the coconut oil, egg, and vanilla. Stir in the date syrup and maple syrup until thoroughly incorporated. Add in the flour mixture, stirring just until incorporated. Fold in the carrots. Chill the dough for at least 30 minutes.   

  2. Preheat the oven to 325°F, and line a baking sheet with parchment paper.

  3. Drop the cookie dough into rounded scoops (about 2 tablespoons each) on the baking sheet. Bake at 325°F for 12-15 minutes. Cool on the baking sheet for 15 minutes, then transfer onto a wire rack to cool completely.

  4. Once cooled, drizzle melted coconut butter over each cookie, and allow to set for 30 minutes. Store leftover cookies in an airtight container for up to one week.
