Ingredients

4 gluten-free tortilla wraps of choice

2 grilled or cooked pasture-raised chicken breasts

1 red bell pepper

½ red onion, diced

1 avocado

2 cups loose spinach leaves
Dressing:

¼ cup olive oil

1 tsp. Dijon mustard

2 tsp. curry powder
-
1 tsp. maple syrup

½ tsp. salt

¼ tsp. pepper
Preparation

Whisk together all dressing ingredients and set aside.

Cube chicken and place in a bowl with the diced red onion. Add in dressing and mix well.

Slice bell pepper and avocado.

Open all 4 tortilla wraps and divide chicken equally into each one. Add in avocado slices, bell pepper slices, and spinach. Close wrap (like a burrito) and wrap in foil.
