Ingredients

  • 4 gluten-free tortilla wraps of choice

  • 2 grilled or cooked pasture-raised chicken breasts

  • 1 red bell pepper

  • ½ red onion, diced

  • 1 avocado

  • 2 cups loose spinach leaves

Dressing:

Preparation

  1. Whisk together all dressing ingredients and set aside.

  2. Cube chicken and place in a bowl with the diced red onion. Add in dressing and mix well.

  3. Slice bell pepper and avocado.

  4. Open all 4 tortilla wraps and divide chicken equally into each one. Add in avocado slices, bell pepper slices, and spinach. Close wrap (like a burrito) and wrap in foil.

  5. Store in refrigerator for up to 3 days.
