Serves: 4-6

Ingredients

For the salad: 

  • 8 cups broccoli florets 

  • ½ red onion, diced 

  • ⅓ cup sunflower seed  

  • ⅓ cup chopped cashews 

  • ½ cup dried cranberries 

  • ½ cup grapes (red) sliced in half 

Dressing: 

  • 1 cup cashews (soaked for 1 hour then rinsed and drained) 

  • ¾ cup water 

  • 1 scoop Garden of Life Grass Fed Collagen Peptides

  • 2 Tbsp. apple cider vinegar 

  • 2 Tbsp. maple syrup 

  • 1 tsp. garlic powder 

  • ½ tsp. salt 

  • ¼ tsp. black pepper

Preparation

  1. To make the dressing, add all dressing ingredients into a high speed blender and blend until smooth.

  2. Place all salad ingredients into a large bowl. Pour dressing over salad ingredients and toss until well coated.

  3. Serve or store in refrigerator for up to 5 days.
