You don't have to be vegetarian to absolutely fall in love with this flavor-packed, Asian style Miso Portobello Burger recipe. Serves: 2

Ingredients

  • 2 large portobello mushrooms

  • 1 Tbsp. miso (yellow preferred)

  • 1 Tbsp. sesame seed oil

  • ¼ tsp. red pepper flakes

  • 1 Tbsp. coconut aminos

Cucumber Salad:

  • 2 large cucumbers

  • 1 scallion

  • ¼ tsp. salt

  • ½ Tbsp. rice wine vinegar

  • 1 tsp. sesame seeds

  • 1 tsp. coconut aminos

Carrot salad:

  • 1 ½ cups matchstick carrots

  • 1 scallion

  • 2 tsp. rice wine vinegar

  • ½ tsp. sugar of choice

  • ½ tsp sesame seeds

Spiced Guacamole:

Preparation

  1. Whisk together the miso, oil, coconut aminos and red pepper flakes then brush on both sides of the portabellos (remove stem first).

  2. For the cucumber salad: Using a mandolin slicer, cut cucumbers lengthwise. Slice scallions on an angle then whisk together the remaining ingredients and toss with the cucumbers and scallions.

  3. For the carrot salad: Toss all ingredients together.

  4. For the spiced guacamole: Mash together all ingredients.

  5. Heat a grill pan to high on the stovetop (or use the grill) and grill each portobello 2-3 minutes on each side.

  6. Spread guacamole on each bun, place portobello on, then top with cucumber salad and carrot salad then cover with the other bun. Enjoy!
