Cherry Beet Smoothie Bowl

Ingredients

  • 2 small beets
  • 1 cup frozen cherries
  • ½ banana, frozen
  • 1 cup baby spinach
  • ½ cup unsweetened almond milk
  • ¼ tsp. vanilla extract
  • 1 Tbsp. flax seeds
  • 1 scoop Garden of Life SPORT Organic Greens Powder
  • Optional toppings: banana slices, granola, shredded coconut

 

Preparation

  1. Place beets in a saucepan and fill with enough water to cover. Bring the water to a boil and cook until the beets are tender when pierced with a sharp knife, 20 to 30 minutes.
  2. Transfer the beets to an ice water bath. When cool, use a peeler to remove the skin of the beets.
  3. Place beets, cherries, banana, spinach, milk, vanilla, flax, and greens powder in a high-speed blender. Process until smooth; the mixture will be thick.
  4. Transfer smoothie to a serving bowl. Top with banana slices, granola, coconut, and other toppings, if desired.
